For my friends who have been requesting for recipes from the beautiful God's Own Country- Kerala,  where I lived a no of years, I am sharing the delectable Kerala Chicken Fry Recipe, I learnt from a chef of a restaurant that specialised in Chicken fry. 


 KERALA CHICKEN FRY





INGREDIENTS

Chicken – ½ kg

Kashmiralal Chilli powder – 1 ½ tbsp 

Chilli flakes – 1 tbsp 

Pepper – 1 ¼ tsp

Turmeric powder – 1 tsp

Cumin powder – ¼ tsp

Garam Masala – ½ to ¾ tsp

Ginger paste -1 tsp

Garlic paste – 1 tsp

Vinegar 1 tsp 

Curd – 2 tbsp 

Curry leaves – a handful

Rice Powder – 1 tbsp

Salt to taste 

Coconut oil for  frying 


METHOD

  1. Mix the chicken with all the above ingredients.

  2. Marinate for an hour before deep frying the chicken pieces.

  3. In a Kadhai / wok, heat coconut oil  and when hot add the chicken pieces

  4. Once they cook on on one side turn the pieces over .

  5. Add Curry leaves and stir.

  6. Remove chicken when done and drain off excess oil.

  7. Serve hot with onion rings and lemon slices.
