For my friends who have been requesting for recipes from the beautiful God's Own Country- Kerala, where I lived a no of years, I am sharing the delectable Kerala Chicken Fry Recipe, I learnt from a chef of a restaurant that specialised in Chicken fry.
KERALA CHICKEN FRY
INGREDIENTS
Chicken – ½ kg
Kashmiralal Chilli powder – 1 ½ tbsp
Chilli flakes – 1 tbsp
Pepper – 1 ¼ tsp
Turmeric powder – 1 tsp
Cumin powder – ¼ tsp
Garam Masala – ½ to ¾ tsp
Ginger paste -1 tsp
Garlic paste – 1 tsp
Vinegar 1 tsp
Curd – 2 tbsp
Curry leaves – a handful
Rice Powder – 1 tbsp
Salt to taste
Coconut oil for frying
METHOD
- Mix the chicken with all the above ingredients.
- Marinate for an hour before deep frying the chicken pieces.
- In a Kadhai / wok, heat coconut oil and when hot add the chicken pieces
- Once they cook on on one side turn the pieces over .
- Add Curry leaves and stir.
- Remove chicken when done and drain off excess oil.
- Serve hot with onion rings and lemon slices.
