With the heat and all of us getting stewed in the hot, humid air, something cooling would be welcome, followed by many other healthy salads to cool us down. 

So here are some Maharashtrian-style summer coolers .......

KHAMANG KAKDI (ZESTY CUCUMBER SALAD)



KHAMANG KAKDI (ZESTY CUCUMBER SALAD)


Ingredients

Cucumber - 2 big diced

Peanut - ground coarsely - 1/2 cup

Chopped Green Chillies -2 to 3

Lime - 1/2 lime 

Mustard seeds for seasoning -1/2 tsp

Coriander leaves for garnishing -1/2 tsp

Salt to taste


Method :

1.     Dice Cucumber

2.     Grind Peanuts coarsely

3. Chop Green Chillies

4.     Mix all the above and squeeze the lime in it

5.      Add salt

6.     Heat oil in a Kadhai / or in a long seasoning ladle

7.   Add Mustard seeds and when they stop spluttering pour on the cucumber and stir immediately

8. Garnish with coriander leaves

9. Serve Cold
