Roasted Brinjal ( Baingan / Vaanga)  Raita with Curd tastes really good with Bhakri ( Flat Bread or Rotis made with Jowar, Raagi, Bajra and wheat flours)


BRINJALS GETTING ROASTED

BRINJAL RAITA WITH CURD 



INGREDIENTS
Brinjals - 2 Big 
Onions  - 2 
Green chillies -  3 to 4 Chopped 
Curd - 1/2 to 3 /4th cup ( add little more if you like )
Coriander leaves - For Garnishing
Mustard seeds - 1/2 tsp for seasoning

METHOD
1. Roast the Brinjals well.
2. When done, remove the skin
3. Mash the pulp with a fork and keep aside .
4. Chop the Onions and the Green chillies and add them to the brinjal.
5. Add Curd 
6. Salt to taste 
7. Mix the above ingredients 
8. Heat oil in a ladle for seasoning.
9. Add the mustard seeds and when they stop spluttering pour them on the Brinjal and mix .
10. Garnish  with coriander leaves
