Maharastrian Matki/ Moth/Dew Beans Usal 
Matki or Dew bean -(Vigna aconitifolia) is a legume.  We Maharastrians make it as a curry or as Usal which is dry . Can be eaten with the main meal or as an evening snack. I love it topped with chopped raw onions and lime.
One thing I can eat daily with Bhakri for lunch or as an evening snack - hot or cold !


Sprouted Matki / Dew Beans



Sprouted Matki with Spices 



Dry Matki Usal



Ingredients
Sprouted Matki/ Moth/  1 Katori /Cup
Onion - 1 Big
Turmeric - 1/2 tsp
Chilly Powder - 2 tsps ( less or more depends on how much spice you like )
Jeera ie cumin -1 tsp
Dhania - 1 tsp 
Garam Masala - 1/4th tsp 
Jaggery - 1 small piece 
Salt to taste

Method
First soak the Matki /dew beans /moth overnight and drain the water next morning. Then allow them to sprout. In summers they sprout quickly but winters they may take a day.

After they sprout cook as follows :

1. To the oil add the Asafoetida 
2. Add chopped onions
3. When the rawness goes, add the matki beans and saute.
4. Then add all the above masalas except salt and jaggery and mix well .
5. Cook in a wok but it takes a while to cook so you can also Pressure Cook for 2 whistles only or the beans will get mashed.  (I cook in a wok as I prefer it that way ). 
6. Then open and cool if using pressure cooker.
7. Add Jaggery and salt and simmer for a minute and dry the water if any is left .
 8..Garnish with onion rings and coriander leaves and a few drops of lime and eat with coriander and coconut chutney 
9. Serve hot or cold . 


GREEN CHUTNEY

Ingredients
1 cup grated fresh coconut
1 cup fresh coriander leaves
4 to 5 green chillies 

Grind all the above and then add 1/2 a lime and salt to taste and mix well.
