Hi all,
Sharing my Award-winning "Raagi ( Finger Millet ) and Oats Cake with dry fruits " Recipe that was selected in the INTACH International Year of the Millets 2003 competition!
Raagi ( Finger Millets ) and Oats with Dry Fruits Cake
Ingredients :
1 cup Raagi ( Finger Millet ) flour
1 cup Oats
1 cup Jaggery dissolved in water
250gm pure melted Ghee ( Clarified butter)
1 3/4th teaspoon Baking Powder
250gm pure melted Ghee ( Clarified butter)
1 3/4th teaspoon Baking Powder
Dry Fruits
1 cup walnuts broken into pieces
1/2 cup almonds ground coarsely
1/2 cup almonds ground coarsely
1 cup de-seeded dates ground into a paste or chopped finely.
1/2 cup chopped figs
1/2 cup manukas
1/2 cup chopped figs

Spice :
1/2 teaspoon cinnamon Powder
1/2 teaspoon cardamom Powder
A pinch of clove and nutmeg powder OR 1 teaspoon of vanilla essence
1/2 teaspoon cardamom Powder
A pinch of clove and nutmeg powder OR 1 teaspoon of vanilla essence
8 to10 tablespoons Milk
3 to 4 Apples - cooked and pureed ( you can use banana too if apples are not available )
Seeds :
1 teaspoon sunflower seeds
1 teaspoon watermelon seeds ( optional )
1 teaspoon pumpkin seeds
Method :
1. Mix all ingredients well and prove for 45 minutes in Fridge (when you add baking powder.
OR
2. Prove it overnight or even for 2 days ( when baking powder is not used).
3. Pre-heat oven for 20 minutes
4. Bake for 35 to 4o minutes at 180- 200 degrees Celsius.
5. Cool and remove.
Note:
1. For those who want to avoid 1 cup Jaggery, take 1/4 cup Jaggery and increase the Dates to 1 and 1/2 cup.
and
2. For those who want to avoid Jaggery totally, increase the quantity of Dates to 2 cups and also add kismis and manukas.
