Merry Christmas! 🎅🎅⭐🎄🎄

Many of you must be busy cooking up a traditional Christmas dinner - Roast Turkey, Xmas Cake, or Pudding. I decided to go with Roast Chicken and Vegetables. It's simple and easy to prepare and comes out really well.

Sharing my tried and tested recipe which my friends loved. It's utterly butterly delicious 😋😋

Roast Chicken with Vegetables

Ingredients :

Whole Chicken without Skin - 1.5 to 2 kg 

Softened Butter - 60 gm 

Garlic Paste -  2 .5 Teaspoons  

Marjoram - 1 tsp 

Thyme - 1 tsp 

Salt and pepper to taste 

Lime - 1 

Baby Potatoes   - 500 gm( half cooked )

 Beans - 150gms ( sliced diagonally )

Carrots - 150 gm ( cut long) 

Peas - 150 gm ( Boiled )

Small Onions  - 150 to 200 gms  ( Quartered )

Zucchini - 150 gms  ( round thick slices ) 

Method : 

  • Rub salt, pepper, and lime on the washed Chicken and keep it aside for 15 minutes.

  • Meanwhile, prepare a marinade of butter, garlic paste, marjoram, and thyme.

  • Blend all the four ingredients into a smooth paste.

  • After 15 minutes apply the marinade to the Chicken and let it stand for about 2 hours.

  • Then just before roasting preheat the oven to 220 degrees C

  • Tie the chicken legs together firmly by crossing them over each other and also tuck the wings with a fine string but I use a toothpick and stick them into the chicken legs firmly.

  • Place the tied chicken - breast side up in a roasting pan and roast for about 15 to 20 minutes.

  • Reduce the temperature to 160 degrees C and cook for about 1 hour and 30 minutes checking at the same time how evenly it is browning. 

  • Once the breast side has browned evenly, then turn the chicken and baste it with a little butter and again roast the chicken for 35 minutes checking on the browning. Add the baby potatoes and mix with the drippings 

  • While the chicken is roasting, take a saucepan, add 2 tbsps butter, and saute the uncooked carrots, boiled beans, peas, raw zucchini, and onions. once slightly brown, sprinkle a lttle marjoram and thyme and add it to the drippings in the roasting pan along with the chicken and roast for about 5 to 7 minutes. 

  • Garnish chicken with dried  Parsley, and coriander leaves ( optional)

  • Serve hot.
