Hi all,
We returned from the torrential rains in Kerala to the sizzling heat of Delhi!!. I literally stepped back as I came out of the Airport!
With the sun breathing down on us and temperatures rising to 40 and above we are left with parched throats, and we do the inevitable.... guzzle down the Aerated drinks!
But here's something healthy again for you....
In my previous posts dated 18th June 23 and 03 July 23, I had posted different kinds of healthy summer coolers to beat the heat and to quench our thirst! Many tried and loved it and so this time too I am sharing some more of my summer coolers though not just a cold drink but chilled cold soups too - (I love soups be it hot or cold), my own cold salad and homemade mango Ice cream too!
I eat a lot of Salads, Vegetables and Fruits and make my own combinations and dressings which my children say turn out well. So here I am sharing some of them ....

SUMMER FIESTA |
MALTA / ORANGE MINT COOLER
Serves 2
INGREDIENTS:
Malta /Orange Juice - 250 ml
Water - -250 ml
Lemon Juice - 170ml
Castor Sugar - 150 gm
OR
Coconut Sugar / Coconut Palm Sugar - 150 gm
Fresh Mint Leaves - 75gm
Malta / Orange Peel ( diced or shredded) - 75 to 100gm
Ice cubes
Garnish with Mint leaves and Orange Peels
METHOD:
1. Put washed mint leaves in a bowl .
2. Make the sugar syrup by boiling water and sugar (either with castor sugar or coconut sugar). Once sugar dissolves pour the syrup on top of the mint leaves. Cool at room temperature.
3. Regarding sugar I used the Coconut Palm Sugar as against the white sugar as its a healthy option so the colour of the Juice becomes brown as you can see in the photo
If you prefer the white sugar so the Malta colour doesn't change you can use that too.
.4. After pouring the boiled sugar syrup on the mint leaves, cool . Then add the malta /orange juice, the lemon Juice. Top it with the diced or shredded peel of the malta /orange and a few fresh Mint leaves
5. Cover the vessel and keep it at room temperature for an hour or so and then strain the Juice.
6. After that Chill the juice for an hour or two . It should be chilled as it really tastes nice .
7. Before serving garnish it with few mint sprigs and diced malta /orange peel again .
8. Garnish with a slice of lemon / malta and serve .

2. PINEAPPLE & RUM PUNCH WITH HONEY
INGREDIENTS :
Pineapple Puree - made from 2 big slices
Pineapple syrup - about 1/2 Cup (120ml)
Rum - 50 ml
Honey - 2 tbsp
2 to 3 Cherries for garnishing
METHOD
1. Mix the Pineapple Puree and the Pineapple Juice well.
2. Pour the Rum in a bowl and add honey.
3. Pour the Pineapple mixture into the Rum and honey and mix well .
4. Stick a cherry and a slice of Pineapple on the Glass .
5. Serve chilled
